I grief only if the base is relatively small.
Griefing bigger bases takes a bit of time and if it's a known players base then you have a high chance of getting caught, so you would want to extract all the valuables and leave as quickly as possible. If it's a rando, however, I would take my sweet time on it.

I also found (on CM 1.8) a tree that generated over a water lake.

About the elytra not activating.. Here's what I do:

1. Build a huge tower (mine is two stacks (128 blocks) high.

2. Go to the top and walk off

3. WAIT..... Don't activate it immediately, let yourself fall a bit before activating.

4. Smooth sailing from there, except the lag of course.

I've noticed jumping off the tower is less likely to work, try walking off instead.
